Stuffed Aubergine

Stuffed Aubergin

Ingredients: (Ingredients for 6 people)
·         Kilo aubergine
·         Tablespoon salt
·         Tbsp vinegar

Stuffing:
·         Large clove of garlic mashed
·         Handful of coriander
·         Tbsp harissa
·         3 small green chilli
·         ½ cup vinegar
·         4 teaspoons ground cumin
·         Small tablespoons salt
·         ½ cup olive oil
·         Cumin for sprinkling

Method:
·         Put 10 cups of water in a pot, add salt and vinegar and let boil, and then add the aubergine and let sit for 10 minutes or until tender.
·         Remove the aubergine and put it under fresh running water until cool and drain well.

Start preparing the filling:
·         Blend the garlic, coriander and harissa and and the 3 small green peppers that have already been cleaned of seeds, vinegar, cumin and salt in electric mixer.
·         Add the oil and keep up the mix for few seconds.
·         Take the aubergine, and carve from inside and fill it with stuffing.
·         Put the aubergine pieces in a dish and leave in the refrigerator for an hour before the final presentation.
